- 400 grams peeled chickpeas
- 4 tbsp tahini
- 2½ lemons juiced
- 3 cloves garlic crushed
- 1½ tsp salt
- 1 tsp cumin
- olive oil
- paprika
- fresh parsley
Soak the chickpeas overnight and cook until tender, about 1.5-2 hours. Keep some of the cooking water
Blend tahini and lemon juice
Add garlic, salt, and cumin
Add chickpeas and some of their cooking liquid. Blend until smooth
Top with olive oil, paprika, and fresh parsley
